New Year’s Eve Degustation Dinner at Cradle Mountain

Ring in the New Year with an unforgettable evening at Highland Restaurant, Cradle Mountain Lodge.

Start with a glass of Josef Chromy NV Tasmanian Cuvée and enjoy a carefully prepared menu designed to celebrate the occasion.

Begin the evening with focaccia served with cultured black garlic butter, followed by a selection of snacks to share, including oysters with champagne granita and finger lime caviar, lobster rolls with Marie Rose sauce, and baked Tasmanian scallops with herb butter and puffed wild rice.

For the first course, savour Hiromasa kingfish, complemented by almond, dill, green apple, radish, flying fish caviar, and finger lime. The second course features a shared plate of beef carpaccio, truffle aioli, parmesan, yuzu olive oil, and pickled mushrooms.

Indulge in a twice-baked gruyere soufflé with fennel and mandarin salad, topped with toasted hazelnut. The main course is a showstopper: Côte de Boeuf – Cape Grim rib eye, served with truffle mash, seasoned greens, truffle béarnaise, and French fries.

End the evening on a sweet note with a yuzu and lemon tart with meringue, raspberry gel, and lime sherbet.
